Mediterranean Quinoa

This is a nice way to add a little flavour to quinoa. My family loves it!


2 cups water
1 cup quinoa
2 baby English cucumbers chopped
12 grape tomatoes cut in half
2 green onions chopped fine
1/4 cup kalamata olives sliced (I buy them without pits)
1/3 cup feta cheese


  1. Put water and quinoa into a medium saucepan and bring to a boil. Reduce heat, cover and simmer for about 15 minutes, stirring occasionally. Remove from heat when water is absorbed and let stand till cool.
  2. Mix cooled quinoa and all other ingredients together in a bowl.
  3. Serve and enjoy!
